COWBOY GOULASH

I remember this dish as a childhood favorite that was my mother’s ‘go-to’ recipe.  My mother wasn’t a particularly good cook with this single exception.  I think she invented it and called it cowboy goulash because she knew that anything that had to do with cowboys would appeal to the kids in the household who imagined cowboys gathered around the chuckwagon after a long day on the open range.

The ethnic background of my mother’s cowboy goulash is purely coincidental and resembles its Hungarian name ‘goulash’ to its ethnic origins very little. But it is a hearty, flavorful dish, nonetheless.

My simple ingredients include good ground beef, onions sautéed in bacon, roasted red peppers, celery, kidney beans, stewed tomatoes, unique spices, and elbow macaroni for the starch. I offer two varieties, one with roasted green chilies for those who like that special cowboy kick. You’ll always feel at home on the range with my mother’s cowboy goulash.

    This meal was a pleasant surprise. I had the spicy version and it has a good kick. This is the third meal I’ve purchased from Carl’s Corner, and I have not been disappointed.
