CHICKEN PAPRIKASH
As you explore our menu, you will soon learn that our offerings favor Eastern European tastes. Given my Polish heritage, this is intentional, but also significant in a part of the country that is inundated with excellent Mexican and Mexican-American cuisine. I hope that my offerings can satisfy the cravings of my Slavic friends, and successfully introduce new flavors and cultures to my Prescott community.
Landlocked in Central Europe, Hungary has long been the crossroads from Celts and Romans to Huns and European nomads of various origins.
Someone once said, “If a Hungarian invites you to their home, make sure you arrive with an empty stomach.” Hungary’s most famous dish – a worthy rival to goulash – is Chicken Paprikash – Paprikás Csirke in Hungarian – a tasty meal of tender chicken typically served with noodles served in a creamy, paprika-based sauce. They say Chicken Paprikash dates back to the 18th century, but I think maybe sooner. Made from simple and available ingredients like chicken, onions, sour cream, and paprika, it reflects peasant origins in a country noted for its rural communities. I offer my Chicken Paprikash ladled over a bed of egg noodles typically served as a side for meat dishes in Eastern Europe. These are the same noodles I include with our Beef Stroganoff.

Because I knew Carl was heading south over the weekend, I purchased several meals. I intentionally bought pre-prepared frozen meals to determine how they would survive in the freezer. I had the paprikash last night for dinner. It was prepared a month ago, but you would never know it. It was excellent and bursting with flavor. I was most impressed with the homemade noodles. You can’t get meals like this anywhere, particularly at Carl’s prices. If you live in Prescott, take advantage of Carl’s exceptional cuisine. If you live in Phoenix or Tucson, give him a call and see when he will visit your area.
