CHICKEN NOODLE SOUP

As the temperature begins to cool in the Arizona mountains, we prepare for the cold and flu season.  Here at Carl’s Corner, we’ve added chicken soup to our expanding menu.  There is no substitute on these chilly days and nights than a steaming bowl of homemade chicken soup. And the soup I offer has all the right ingredients to help ward off the things that can make us miserable as the weather fluctuates.

My chicken soup has enough fresh garlic, lemon, red Bell peppers, onion carrots and a little tomato and large chunks of chicken to satisfy the hungriest lumberjack. The vegetables are roasted before they go into the pot. It gives the vegetables a really nice full-bodied flavor.  As the vegetables roast, I add special herbs and spices.

I love this time of year, and cooking the soups and stews that I love adds to my joy. I know you will love them too.

    Soup like this is many levels above what you can buy in a can and what you can expect in a restaurant. I had a bowl for lunch and left the table content and satisfied. I haven’t had soup like this in 50 years when my Babcia would labor over her stove creating what cannot be duplicated in a can. Five stars for sure.
